Lori’s Chili Recipe 🌶
Ingredients:
1 lb ground beef (or ground turkey)
1 green pepper
1 white onion (or whatever color onion you prefer using)
1 tb garlic (sometimes I forget and it's fine)
1 can Rotel
1 8oz can of unseasoned tomato sauce
1 can of beans (I usually use kidney or pinto, but have used black)Seasonings:
Lawry's Seasoning Salt (or regular salt is fine)
Garlic Powder
Onion Powder
Chili Powder
Cumin
Paprika
Cayenne Pepper
Crushed Red PepperMethod:
Note—I use an InstaPot, so I am able to brown/sauté the ingredients, then switch over to slow cooker all in one thing. But if you don't have an Instapot, you could cook the chili on the stove (and shorten the cooking time) or do the first steps on the stove, then add everything to a traditional crockpot.
Cooking Instructions
Brown the meat. While the meat is going, I cut up the green pepper and the onion, then I toss them in while the meat is still cooking.
After about 5 minutes, I'll turn off the brown/sauté function. Sometimes I drain off some of the fat, sometimes I don't. It depends on how much is accumulating and how lazy I feel.
Add the seasoning. I don't measure. I just take a sprinkle pass or two with each seasoning and call it good. Let your spirit guide you.
Add the Rotel, tomato sauce, and the beans.
Give it a stir,, then turn on the slow cooker setting. Cook on low for 6-8 hours or high for 3-4.
Serve with Saltines, sour cream, cheese, whatever chili garnishes you like.
Then for Three Way Chili, boil some noodles, add to leftover chili, add cheese, have a mouth orgasm!
